I’m right there with you about the Lutefisk. My mother would make Lutefisk for special occasions, we would find any excuse to run errands and make a food stop. I really enjoy the progressive thinking of Norway and only wish my great grandmother’s heritage would allow me to live in the country. Need to find a new country after this last election.

While in Minnesota it is too bad that you were not able to get out into the rural western part of the state. In our little town of Sunburg, pop 101 lutefisk is still served at the Kaffestua 1 day a week in the fall. We have the Kultuhus where Norsktimer is held each Friday afternoon from 2 until 3 pm (only Norsk is spoken) and this is followed by Norsklassen from 3 to 5 pm year around. Across town is the only Barnehagen (preschool) funded as part of the public school system with 17 students ages 3 and 4. I think you would enjoy visiting here as well (even if you may not enjoy lutefisk with the same gusto as the 650 people that will eat it at Hope Lutheran church this Saturday night.)
